Looking After Cask Beer: Setup, Conditioning and the Quality Spiral

This is Part Three, the last part, of the draught beer wastage series. Part One covered range sizing, Part Two covered dispense and fobbing. This part goes back to where it all actually starts, cellar setup and conditioning, because neither of the earlier fixes matters if the beer was never looked after properly before it reached the tap.



Cask beer isn’t a finished product when it arrives.

It’s live beer, still carrying yeast and a small amount of fermentable sugar, and it doesn’t become sellable until it’s been properly conditioned in your cellar. Get that stage right and the beer looks after itself for the rest of its short life. Get it wrong, and no amount of good intentions at the bar will fix what went wrong before it was even tapped.


Two ways to set it up

Horizontal stillage is the traditional method. The cask sits on its side, shive at the top, keystone aligned vertically at the bottom, and you vent and tap it in place.


It takes less kit to keep clean, and you can pull a sample straight from the cellar to check it before it goes on sale. The trade-off is manual handling, lifting casks onto a stillage is real physical work, and it takes up more space in the cellar than a standing cask would.


Vertical extraction stands the cask upright and uses a rod, flexible or rigid, dropped down through the keystone to draw beer up from the bottom.

It takes up less floor space and cuts out the lifting problem entirely, the cask doesn’t need to go anywhere.


Against that: more equipment to keep clean and sanitised, sampling is less straightforward than just pulling from a cellar tap, and there’s a smaller settling area for sediment, which raises the risk of pulling sediment through the lines if the rod isn’t set correctly. With rigid rods specifically, the rod needs to touch the bottom of the cask and then be withdrawn by 2.5cm before it’s locked in place, so the end of the rod isn’t sitting in the sediment it’s meant to be avoiding.


There’s a variant worth knowing about too. A floating system, Cask Widge is the established name for it, works differently from a fixed rod. Instead of drawing from one locked depth, a floating filter sits just below the surface of the beer and follows it down as the cask empties, always pulling from just under the “top break” rather than a fixed point. Taking beer from that sub-surface layer keeps oxygenation and contamination from spreading down into the beer underneath, and it’s been used across pub estates for years precisely because it avoids lifting full casks entirely.


Neither method is objectively better. It’s a trade-off between labour, space, and how easy you want sampling to be, and the right answer depends on your cellar, not a rulebook.



Looking after it once it’s set up

Whichever method you use, the beer needs the same things to condition properly.

Let it settle. Roll the cask around the cellar first to redistribute sediment evenly and let the finings work, then leave it to reach cellar temperature, which can take up to 24 hours. Vent it correctly, hard peg first to let the excess CO2 escape, then swap to a soft peg once it’s stopped bubbling. Some beers are lively enough that the soft peg needs replacing more than once as conditioning continues.


Don’t guess when it’s ready. Take a sample and check clarity, aroma and taste before it goes on the bar. If it’s not there yet, leave it another 24 hours and check again. Once it passes, it’s on sale, and the clock starts: 3 days is the target window, extendable to 4-6 days if you’re using a breather or aspirator.


Temperature discipline doesn’t stop once the cask is conditioned. Keep the cellar between 11-13°C throughout, that’s what the BII’s own decay curve is built on, day 1 perfect, day 2-3 satisfactory, day 4 onwards deteriorating rapidly. That’s not a hard cliff-edge, it’s a curve, but it moves fast once it starts.


And don’t let good practice lapse just because the cask’s on sale. Hard peg it at the end of every night to keep the condition in. When it’s empty, take it off the stillage or out of the extraction rig straight away, don’t let a spent cask sit around, and clean and sanitise every piece of equipment that touched it before it’s used again.


The cellar itself is part of this, not separate from it. Clean spillages up immediately, they’re a contamination source as much as a slip hazard. But be careful what you clean it with: strong-smelling disinfectants will taint the beer, cask ale is live and it absorbs odours from its surroundings, so an aggressively-scented cleaning product can ruin a perfectly well-conditioned cask before it’s even poured.


Don’t store food in there either. A cellar isn’t a food prep area, but because cask and keg beer are both legally classed as food, it’s legally a food storage area, held to the same structural and cleanliness standards as a kitchen: floors, walls, sumps and drains cleaned regularly to stop mould, yeast and bacteria building up.


General food doesn’t belong in there either way, the temperature and humidity are wrong for storing it properly, and food odours can taint the beer just as badly as the wrong cleaning product does. I’ve seen sites use the cellar as an impromptu fridge, plates of sandwiches sat on top of kegs to keep cool for a buffet. It solves a short-term storage problem and creates a food safety one at the same time.


The spiral this either builds or breaks

None of this is optional detail. Get it wrong and you start a downward spiral: poor practice leads to worse quality, worse quality means falling sales, falling sales means beer sits on longer, and sitting longer makes the quality worse still. And it goes on…


Get it right and the same loop runs the other way. Good practice in the cellar means better quality on the bar, better quality drives more sales, more sales mean faster turnover, and faster turnover means less wastage and higher yields. That loop feeds itself too, just in the direction you actually want.


Setup and conditioning aren’t the most glamorous part of managing cask beer, but they’re the part that decides whether everything downstream, the range sizing, the dispense technique, the fobbing you’ve already fixed, actually has a good product to work with in the first place.
