The Drip Tray Is Quietly Costing You £20k a Year

Every pub has drip trays behind the bar. Lots of operators don’t concentrate on what’s actually ending up in them.
Fobbing is excessive froth, beer dispensing more foam than liquid. It happens for a handful of reasons: cellar running too warm, dirty lines, low coolant in the remote cooler, or a bartender with poor dispense technique. None of it appears dramatic and that’s exactly why nobody picks up on it.
There’s a general indifference to draught beer wastage, especially cask beers, where it’s just seen as an operational cost that should be lived with. Some wastage at dispense is genuinely unavoidable, the first inch of a fresh line, the odd mis-pour, that’s the cost of running a bar.
But fobbing isn’t that. It’s not an inevitable feature of pulling pints, it’s a symptom of something not being maintained. Most operators lump it in with “normal wastage” and stop looking.
It shouldn’t be there at all, and every pint sitting in that drip tray is a pint you have already paid for and a pint that your temperature, your lines, or your technique let go to waste.

Count your taps and handpulls.
Multiply by 1.5 (average number of pints a drip tray holds when it’s full)
That’s your daily loss in pints, if just one drip tray per tap fills with wasted beer once a day.
Multiply by what you charge for a pint.
Multiply by the days a year you’re open.
Eight taps and handpulls. 1.5 pints each. £5 a pint.
Open 365 days a year
8 × 1.5 = 12 pints a day.
12 × £5 = £60 a day.
£60 × 365 = £21,900 a year.
Scary! That’s not one bad night, it’s not a one-off keg change gone wrong. That’s what one filled drip tray per tap, per day, costs you over a year, quietly, with nobody ringing an alarm bell because nothing appears to have technically gone wrong. The beer’s just pouring badly, and pouring badly is expensive.

Why it happens
Fobbing isn’t random. It’s caused by:
• Cellar temperature too high
• Dirty beer lines
• Low coolant in the remote cooler
• The wrong glass.
Nucleated glasses, etched to promote bubble formation, are for lager and keg. Cask ale already carries its own natural condition, pour it into a nucleated glass and you’re overgassing a beer that didn’t need the help
• Bad dispense technique.
Pulled in short, quick steps instead of one smooth stroke. Industry best-practice guidance is blunt about it: the beer doesn’t dispense any faster that way, it just overspills.
Every one of these is checkable. None of them need new equipment, most of them need someone actually looking.
Check cellar temperature daily, 11-13°C is the standard, and if it’s drifting warm, find out why before it costs you in wastage.
Keep line cleaning on schedule, don’t let it slip because it costs time and a bit of sellable stock.
Check coolant levels in the remote cooler the same way you’d check any other piece of kit that’s doing a job you’re relying on.

Manual checks work if someone actually does them every day, but this is the same daily monitoring discipline running automatically, catching the drift the moment it happens instead of whenever someone next thinks to look.
Pouring technique is often ignored here because it feels like a training issue rather than a maintenance one. It’s not. Check that you’re using the correct glass for the product, nucleated for lager and keg beers, un-nucleated for cask, before you check anything else about the pour.
A glass that hasn’t been properly rinsed, still carrying detergent or oil residue, kills the head before the pour’s even started.
Fingers on the rim where a customer’s mouth goes is a hygiene issue, not a technique one, grip the glass low.
The pour itself matters just as much.
With a sparkler: Hold the glass vertically, sparkler touching the bottom, then raise the spout as the glass fills, keeping it below the head throughout, not the other way round.
Without a sparkler: Glass at 45 degrees, nozzle clear of the liquid, straightening as it fills, one smooth pull per stroke.
Short jerky half-strokes cause fobbing directly, that’s not folklore, that’s the mechanism. Head should land around 10mm, not a guess, a target.
None of this is complicated. Nobody’s stealing it, nothing’s broken, it’s just quietly adding up because nobody’s watching it, and nobody’s monitoring dispense to see how it’s actually being poured.
