Why cooked weight changes the cost

TOPSIDE OF BEEF
A 9kg joint at £12.00/kg costs £108.
Roasting loses about 30%, leaving 6.3kg.
True cost: £108 ÷ 6.3kg = £17.14 per cooked kg.

A 200g PORTION
Costed at raw weight: £2.40.
Costed at cooked weight: £3.43.
That’s a £1.03 per plate difference - Enough to take a 70% GP dish down to about 63%.

Cost what’s on the plate, not what’s on the invoice.
